Chinese Smashed Cucumber Salad
I first had this at Northeast China Eatery and it changed my life! This recipe is my own take, but probably most heavily follow Chef John’s recipe.
Ingredients:
- 1-2 English cucumbers
- 1 teaspoons kosher salt (this is a salty dish. Use kosher salt though. The grain size matters)
- 2 teaspoon organic brown sugar
- 4 garlic cloves, finely crushed or chopped (if you like garlic)
- 2-3 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Red pepper flakes (I like drying my own and pulsing in blender)
- Crushed sesame seeds
