Chinese Smashed Cucumber Salad

I first had this at Northeast China Eatery and it changed my life! This recipe is my own take, but probably most heavily follow Chef John’s recipe.

Ingredients:

  • 1-2 English cucumbers
  • 1 teaspoons kosher salt (this is a salty dish. Use kosher salt though. The grain size matters)
  • 2 teaspoon organic brown sugar
  • 4 garlic cloves, finely crushed or chopped (if you like garlic)
  • 2-3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Red pepper flakes (I like drying my own and pulsing in blender)
  • Crushed sesame seeds
